Pan fried whole dory

- 1 dory fish (400-600g each)

Clean the fish, wash and pat fish dry. Slice 3x on each side lengthwise with a sharp knife up to the bone.

- ¾ tsp salt
- ½ tsp black pepper
- ½ tsp cayenne pepper
- ½ tsp ground coriander
- ¼ tsp ground cumin
- ½ tsp ground turmeric
- 1 tbsp tamarind paste
- ½ tsp Zensai chili paste
- ½ tbsp soy sauce
- 1 tbsp lemon juice
- 2½ cloves garlic
- ½ slice ginger 1 cm thick

Peel and pound garlic and ginger to a paste. Dissolve tamarind in 2 tbsp water and discard seeds and solids, add tamarind pulp to the paste. Add all other spices, lemon juice, soy sauce and chili paste and grind to a spice paste.

Cover baking tray with foil or banana leaves (if available) and rub with a bit of oil. Cover fish with spice paste, rub it into the cuts and also inside the belly. Drizzle oil over fish and marinade 30min.

Preheat oven to 200 degrees. Close the foil before baking.

Bake fish for 20min, check whether the fish is done before removing from oven.
