Golden flax and chia pancakes with caramelized bananas

Step 1/4
- 17½ g flaxseeds
- 17½ g chia seeds
- 100 g flour
- 7½ g baking powder
- ½ tbsp sugar
- ¾ tsp ground turmeric
- ¼ tsp salt
- 1 eggs
- 125 ml milk
- 1 tbsp unsalted butter (melted)

Whisk together flaxseeds, chia seeds, flour, baking powder, sugar, turmeric, and salt in a bowl. In a separate bowl, whisk together egg, milk, and melted butter. Add dry ingredients to wet ingredients and whisk to combine.

- 50 g mascarpone cheese
- 50 g full-fat plain yogurt

Use a hand mixer to beat mascarpone and yogurt together until light and fluffy, then set aside.
Step 3/4

Add some vegetable oil to a pan over medium heat. Then add a few large spoonfuls of batter to make individual pancakes. When bubbles appear on the top of pancakes, flip them and let cook for another 2 min., or until cooked through. Repeat until no batter remains.

- 1 bananas
- 1 tbsp sugar
- unsweetened coconut flake (toasted, for serving)

Slice bananas. Add remaining sugar to the same frying pan over medium-high heat. Let caramelize for approx. 5 min. Or until amber in color, swirling the pan every so often, but not stirring it. Once browned, add bananas and toss to combine. Let cook for approx. 3 min. Serve pancakes with mascarpone cream and caramelized bananas, then top with toasted coconut flakes. Enjoy!
