"This recipe is inspired by Hong Kong-style French toast, which takes the original up a notch by sandwiching a layer of peanut butter between two eggy-dredged slices of bread. At Hong Kong’s famous tea houses, it’s traditionally deep fried, but for an at-home version, I’ve chosen to fry the sandwich in clarified butter which makes for a crispy, buttery result! You can use regular butter, but since it burns more easily be sure to stay on a lower heat and wipe out any discolored excess in between batches!"

    Whisk together eggs and heavy cream. Season with a little salt.

    Generously coat both sides of one bread slice in the egg mixture, and set aside on a plate. Spread peanut butter on one side of the next slice, and coat the other side in the egg mixture. Sandwich this piece of bread onto the other slice, so that the peanut butter is in the middle. Repeat process for the next sandwich.
