One-pot creamy tortellini soup

- 1 onion
- 2 cloves garlic
- 300 g Italian sausages

Dice onion and mince garlic. Remove the casing of the Italian sausage.

- 4 tbsp tomato paste
- 1 tsp dried Italian herb
- 1 tsp chili flakes

In a big pot, add sausage meat, heat over medium heat and break it down to smaller pieces with a spatula. Fry over medium-high heat, for approx. 5 min. until the sausage is browned. Then add onion and garlic, and fry until fragrant. Add tomato paste, Italian seasoning, and chili flakes, stir to combine, and fry for 2 minutes. until the color of the tomato paste is darker.

- 800 ml chicken stock
- 250 g tortellini
- 200 g heavy cream
- 200 g spinach
- salt
- pepper
Deglaze with chicken stock. Bring to a boil, then add the tortellini and cook according to package instructions. At the very end, stir in heavy cream and spinach. Cook briefly. Season with salt and pepper to taste and serve.
