"This tortellini soup is an upgrade from your store-bought tortellini, which makes a satisfying one-pot dinner in under 30 min. We used packaged tortellini from the supermarket's refrigerated section. If you’re using dry tortellini, please adjust the cooking time and add the cream and spinach at the end. Instead of spinach, you can add Tuscan kale, kale, or swiss chard. Italian sausage lends a ton of flavor and texture to this dish, you can also substitute with other coarse pork sausage."

    Dice onion and mince garlic. Remove the casing of the Italian sausage.

    In a big pot, add sausage meat, heat over medium heat and break it down to smaller pieces with a spatula. Fry over medium-high heat, for approx. 5 min. until the sausage is browned. Then add onion and garlic, and fry until fragrant. Add tomato paste, Italian seasoning, and chili flakes, stir to combine, and fry for 2 minutes. until the color of the tomato paste is darker.

    • 200 g heavy cream
    • 200 g spinach
