Loaded Baked Potato Soup (Crockpot)

Step 1/4
- 5 lbs potatoes
- potato masher
- pot
- colander
- Crockpot
Cut the potatoes into cubes. Add them to a large pot and cover with water. Bring the water to a boil and set a timer for 20 minutes. The potatoes should be soft. Drain the water. Mash them into your desired consistency and place them in the crockpot.
Step 2/4
- 2 cups chicken broth
- ¼ gallon milk
- 3 cups heavy cream
- ½ stick butter
Turn the crockpot on high. Stir the milk, chicken broth, and heavy cream into the potatoes. Stir until combined. Add the butter. Let cook for 2 hours while stirring occasionally.
Step 3/4
- 2 cups sharp cheddar cheese
- 1 cup mild cheddar cheese
- 5 American cheese slices
- 1 cup real bacon bits
Add the cheeses and bacon bits and stir until incorporated. Let cook for 1 hour while stirring occasionally.
Step 4/4
- 2 tsp salt
- 1 tsp ground black pepper
- 1 tsp chives
- ¼ cup green onion
- 1 cup sour cream
Fold in sour cream, chives, green onion, salt, and pepper. Turn crockpot on warm, and serve. Leftovers can be frozen.
