Italian sausage and pepper stuffed zucchini

Step 1/4
- 1 garlic
- 1 shallot
- 300 g Italian sausages
- 1 red bell pepper
- 2 zucchini

Preheat oven to 180°C/350°F. Peel and finely chop garlic and shallot. Remove Italian sausage from the skin and cut into small pieces. Core the bell pepper and cut into small cubes. Halve zucchini lengthwise and hollow out some flesh, reserving and mincing for the filling.

- ½ tsp thyme

Heat a frying pan over medium heat and sauté the sausages for approx. 2 – 3 min., or until golden brown. Add the shallots, garlic, minced zucchini, and bell pepper and sauté for approx. 3 min. Add tomato paste and thyme. Season with salt and pepper.
Step 3/4
- 40 g grated Parmesan cheese
- 15 g panko breadcrumbs

Mix shredded Parmesan with breadcrumbs and set aside.
Step 4/4

Place the zucchini in a baking dish and stuff them with the sausage and pepper filling. Generously sprinkle Parmesan breadcrumbs over the dish. Bake in the oven for approx. 25 min., or until the crust is golden brown and the zucchini is tender. Enjoy!
