Grilled Citrus Marinated Steak Tacos w/ Chipotle Mayo

Step 1/5
- 8 oz sirloin steaks
- 1 lemon
- 1 tbsp adobo sauce from chipotle peppers
- 1 pinch salt
- 1 pinch pepper
- 2 tbsp olive oil

Slice up steak into small strips about 1/2 inch wide. Put into large bowl and start marinade by pouring in olive oil. Squeeze lemon into bowl and add a heavy pinch of salt and pepper. Put a teaspoon of the chipotle sauce from peppers that we will use later. Stir until incorporated and cover with saran wrap. Put into fridge for 30 minutes.

- 2 chipotle chili in adobo
- ½ cup mayonnaise

While steak is marinating. Get out blender and add in 2 chipotle peppers, mayo, and 1 tablespoon sauce from chipotle peppers can. Mix until smooth and fully blended. Take out of blender and put aside.

- 6 flour tortillas
Stack tortillas in tin foil and put in either oven or toaster oven for about 10 minutes to warm.

- ¼ cup green bell pepper
- ½ cup onion
- 1 tbsp butter
Get medium skillet ready and turn on medium heat. Add butter to pan and wait until it’s melted. Put in onions and peppers and let them sauté and get soft for about 4-6 minutes. Once they are sautéed add steak and cook another 6 minutes or until cooked through.

- avocado (ripe, for serving)
- cilantro (for garnish)
- shredded Mexican cheese blend
Start to assemble! Get warmed tortillas out and lay flat. Add mexican cheese to the bottom of the tortilla and then layer with steak, peppers, and onions mixture. Drizzle chipotle mayo on top. Slice avocado and finely chop cilantro to garnish. Finish with a squeeze of lemon.
