Fluffiest pancakes

- ⅜ eggs
- ⅛ pinch salt
- ⅛ tsp baking soda
- ⅝ tbsp oil
- ½ tbsp sugar
- ⅜ tsp baking powder
- ⅛ tsp vanilla extract
- 1⅝ fl oz milk
- 1⅜ oz flour

The first step is to separate the egg whites. Put them in a bowl, we will need them later. In a large bowl mix everything together using a wisk, except the egg whites. Mix well until there are no lumps in your batter.

Place the egg whites in a mixing bowl and beat them until stiff peaks. Using a spatula, slowly incorporate your egg whites in your batter, with large moves from the bottom to the top. Do this until there are no lumps and your batter is still fluffy. Over mixing can lead to not so fluffy pancakes.

Place a pancake pan or a non sticking pan on low medium heat. Let it get hot for about 2-3 minutes, than take a scoop of your batter and place it in the pan. When it starts making small bubbles on top, it’s time to slowly flip it, using a spatula. Cook it for 1-2 more minutes. If the pancake is getting cooked too soon, turn the heat a little beat lower, just to make sure they are entirely cooked.

Enjoy your pancakes with some maple syrup on top or maybe some Nutella and sliced bananas.
