Brown butter chocolate chip cookies

Melt butter in a small pot and bring to a "boil." While constantly whisking, let it simmer and splutter until the butter smells nutty and is light brown in color. Transfer to a bowl to stop the cooking process, and let the butter cool down to room temperature.

- ⅛ egg yolk
- 33⅓ g flour
- 20 g brown sugar
- 8⅓ g sugar
- ⅛ tsp baking powder
- ⅛ tsp baking soda
- ⅛ tsp vanilla extract
- ½ g sea salt

Preheat oven to 190°C/375°F. Mix brown butter, brown sugar, sugar, and vanilla extract in a large bowl. Add egg and egg yolk and stir to combine. Add flour, baking powder, baking soda, and salt and keep stirring until a smooth dough forms.

- 16⅔ g bittersweet chocolate

Roughly chop both chocolates, you should use one with 50% cacao, and one with 70% cacao. Fold chopped chocolate into the dough. Portion the dough into 12 equal-sized balls and transfer to two parchment-lined baking sheets. Sprinkle with flaky sea salt and bake for approx. 9 min.
