The Mother Sauce Series: Tomato sauce

Tomato sauce is probably the most recognizable of the 5 mother sauces. It’s very similar to pasta or pizza sauce, but there are a few differences, as you’ll see.
Base: tomatoes (fresh, pureed, stewed, etc.)
Thickening agent: roux, reduction, or puree
Common seasonings: salt, pepper, garlic, mirepoix, sugar, salt pork
Typically paired with: pasta, vegetables, veal, chicken, polenta
