Zero waste broccoli stem cheese melts

Step 1/4
- 1 broccoli stems
- 1 cloves garlic
- ¼ lemon
- cutting board

Slice the base off of your leftover broccoli stems, then peel the “trunk” to remove the tough outer layer. Roughly chop the broccoli stem into bite-size pieces. Peel and grate garlic. Zest and juice lemon.

Add some water (about 2 – 3 cm/1 in. deep) to a large frying pan and bring to a boil. Season with salt, add broccoli, cover, and let steam for approx. 2 min., or until just fork-tender. Drain well.
Step 3/4
- 1½ tbsp olive oil
- salt
- pepper
- paper towels
- cooking spoon
Wipe out frying pan and place over medium heat. Add olive oil, then add garlic and broccoli and let cook approx. 2 min. Remove from heat and toss with lemon zest, juice, salt, and pepper.
Step 4/4
- 2½ slices crusty bread
- 2½ slices cheddar cheese
- flaky sea salt
- oven
- baking sheet
Turn on broiler. Spread out bread on baking sheet and toast on both sides. Evenly distribute broccoli to toast, then cover with a slice of cheese. Let broil until cheese is melted and beginning to brown. Finish with flaky salt to taste, serve and enjoy!
