White Chocolate and Raspberry cookies
Ingredients
Step 1/6
Preheat Oven to 180•c or 400•f or Gas mark 4.
Step 2/6
- ⅛ pinch salt
- 41⅔ g plain flour
- ⅛ tsp baking powder
- ⅛ tsp baking soda
- ⅓ tsp cornflour
Whisk together the flour, cornflour, baking soda, baking powder and salt.
Step 3/6
- 8⅓ g caster sugar
- 25 g light brown sugar
- 19⅛ g unsalted butter
- ⅓ tsp vanilla extract
- ⅛ egg
Melt the butter, and mix with the sugars, then add the egg and vanilla extract
Step 4/6
- 29⅛ g white chocolate
- 3⅓ g freeze dried raspberries
Combine the dry ingredients with the wet ingredients, and fold in the white chocolate chunks and raspberry pieces
Step 5/6
Roll the dough into balls and place on baking tray about 3 or 4 at a time to avoid the cookies touching.
Step 6/6
bake for about 7 mins, they should be soft when they come out of the oven, leave them to cool. They should be slightly hard on the outside and soft and gooey in the middle :)
