Vegan chocolate chip cookies

1 oven, 1 bowl (large), 1 whisk, 1 stand mixer with paddle, 1 spatula, 1 baking pan
Step 1/5
- 1 oven
Preheat oven to 375*
Step 2/5
- 2¼ cups flour
- 1 tsp baking soda
- ¼ tsp baking soda
- 1 tsp salt
- 1 bowl (large)
- 1 whisk
Sift flour, baking soda, baking powder and salt together in a large bowl and whisk. Set aside.
Step 3/5
- 2 sticks Vegan butter
- ¾ cup brown sugar
- ¾ cup white sugar
- 2 vegan eggs (egg replacer)
- 1½ tsp vanilla extract
- 1 stand mixer with paddle
In a stand mixer, beat butter on high speed until pale, light and fluffy. This should take 3-6 mins. Add in both sugars and best for another 3 mins. Add in fake eggs and vanilla and mix together.
Step 4/5
- 1 cup dark chocolate chips
- 1 spatula
Add 1/3 of the flour mixture into the butter mixture and mix until just combined. Repeat this until all of the flour mixture is fully combined. Fold in chocolate chips.
Step 5/5
- 1 baking pan
Scoop dough into 1 Tbsp balls for a more uniform cookie or 2-3 Tbsp for a cookie with a larger crispy chewy contrast. Bake in preheated oven for 8-10 mins. Enjoy!
