Sweet & Tangy Chipotle Sauce

- 3 g cilantro
- ½ chipotle chili in adobo
- 1½ cloves garlic
- ½ tbsp orange zest
- 20 ml orange juice
- ⅝ tbsp lime juice
- ¼ tbsp light brown sugar
- ¼ tsp ground cumin
- ¼ tsp salt
- 14 g extra-virgin olive oil

To a blender add the cilantro (including stems), 2 chipotle peppers plus 2 teaspoons of the adobo sauce - note this is 2 peppers from the can, not 2 whole cans!), peeled garlic, orange zest, orange juice, lime juice, sugar, cumin, salt and a generous amount of pepper and the olive oil.

Blend until relatively smooth, scraping down the sides as needed. Season to taste with more salt and pepper as needed. Enjoy! You can store leftovers in a sealed jar for at least a week in the fridge.
