Pecan Banana Matzo Pancakes
Ingredients
Step 1/5
- 2½ sheets matzos
- ¼ cup milk
Break matzo into tiny pieces and soak in a bowl of milk for 10 minutes

- 1½ eggs
- 1 tbsp sugar
- ½ tsp vanilla extract
- ⅛ cup chopped pecans
- ⅛ cup mini chocolate chip
In a new bowl, whisk together eggs, sugar and vanilla. Add in the matzo, pecans, and chocolate chips

- ½ banana
- butter (for frying)
Heat butter in a large skillet over medium low heat. Dollop 2 tbsp batter into the pan and top with banana slices
Step 4/5
Fry for 1-2 minutes, flip, and fry for another minute. Continue with remaining batter
Step 5/5
- maple syrup (for serving)
Serve with syrup
