Healthy green soup

Step 1/7
- ½ head onion
- 1½ tbsp vegetable oil

In a large soup pot, heat up vegetable oil /any high smoke point oil will do/ and add the sliced onion. Caramelise over low/medium heat while you prep your other veggies

- 1 cloves garlic
- ½ carrot
- ½ sweet potato
- ½ green zucchini
- 25 g cauliflower
- 50 g broccoli
Wash and cut your vegetables and after you’ve allowed your onions to brown /around 10-15 min/ add to the pot

- 100 g kale
- 100 g spinach
Allow the vegetables to sauté for a few minutes and add the greens
Step 4/7
- 100 ml chicken stock
- 250 ml water
- ½ tsp smoked paprika powder
- ½ bay leaf
Stir until greens reduce size and add aromatics, along with hot water and chicken stock.

Bring to a boil and then let simmer for 20 minutes, or until your carrots, sweet potato and broccoli are soft.

- 1 tbsp butter
- Hand blender
Once done, add butter. Allow to cool for a few minutes and then blend until smooth

- fresh dill
- ½ tbsp lemon juice
Serve with some plain yogurt, lemon juice and a sprinkle of fresh dill
