Greek Yogurt Potato Salad (With Lemon)

Ingredients

potato1
lemon (juice of)
250 g
full-fat Greek yogurt
2 tsp
Dijon mustardgreen onions (to taste)
fresh parsley (to taste)
4 tbsp
extra-virgin olive oil
salt (to taste)
pepper (to taste)
sugar (to taste)
smoked bacon (for garnish)
Step 1/5
- 1 kg potato
- salt (to taste)
Wash and cut potatoes into four. Cook until soft in salted water.
Step 2/5
- 1 lemon (juice of)
- 2 tsp Dijon mustard
- 4 tbsp extra-virgin olive oil
- pepper (to taste)
- sugar (to taste)
Mix dressing ingredients, try and season to taste. Set aside.
Step 3/5
Drain potatoes and transfer to the bowl. Mix with dressing and set aside. Potatoes will soak in all the flavors!

- 250 g full-fat Greek yogurt
- green onions (to taste)
- fresh parsley (to taste)
When potatoes are still slightly warm, top them with greek yogurt, chopped parsley, green onions, and optionally fried bacon.
