Dukkah-baked Lamb with Orzo

Step 1/18
Preheat the oven to 160°C (140 Fan oven).
Step 2/18
Finely chop the garlic cloves and ginger.

- 1 cloves garlic
- 1⅓ g piece of ginger
- 1 tbsp dukkah
- ½ tbsp tomato paste
- ⅓ tsp salt
- ⅓ tsp black peppercorn
In a small bowl, mix together the diced garlic and ginger, Ralahami Dukkah mix, tomato paste, salt and Ralahami black pepper *Ralahami Dukkah, is a mix of nuts, and Ralahami Cinnamon.

Lather some olive oil onto the lamb shoulder.
Step 5/18
- ⅓ kg lamb shoulder
Evenly apply the prepared dukkah mix onto the lamb shoulder and place the lamb in a lightly oiled oven dish.

Pour 2 cups of water into the oven dish.

Cover the oven dish with a kitchen foil and roast the lamb for 3hrs.

After the 1hr mark has passed of roasting the lamb in the oven, begin preparing the ingredients to make the Orzo pasta.

- 1⅓ mushroom
- 2 tomatoes

Finely slice the onion, green chillies, garlic cloves, mushrooms and tomatoes.

In a large wok, heat 1 tbsp. of olive oil and simmer the onions for 1-2 minutes. Then add the garlic and green chillies and mix the ingredients together and simmer for another 2-3 minutes.

- ⅓ tsp black peppercorn
- ⅓ tsp chili flakes
Add salt, 1 tsp. Ralahami Black pepper and 1 tsp. chilli flakes and mix to combine.

- ⅔ tbsp dark soy sauce
- 1 tbsp tomato paste
Add the dark soy sauce and tomato paste, and mix to combine.
Step 13/18
Add the mushrooms and tomatoes and mix to combine with all the spices.

- ⅔ tbsp sweet chili sauce
- ⅓ tsp ground cinnamon
Add the sweet chilli sauce and Ralahami Cinnamon and mix. After about 2 minutes remove from heat.

- 250 g orzo
Cook the Orzo pasta in boiling water for 10-12 minutes, till the pasta is cooked and has a soft texture. Once the Orzo pasta is cooked, strain the water.

Add the cooked Orzo pasta to the wok containing all the spices, mushrooms, tomatoes, and mix to combine all the ingredients.

At the last 30 minutes of cooking the lamb, evenly spread the Orzo pasta to the Lamb roasting dish. Cover the oven dish with the kitchen foil and continue roasting the lamb with the added Orzo for the remaining 30 minutes.

Evenly slice the lamb shoulder and serve with the Orzo pasta.
