Chicken and cuscus ratatouille
Step 1/4
- oil
- salt
- pepper
- ⅔ tbsp rosemary
- ⅔ tbsp basil
- 1⅓ cloves garlic
- 1⅓ onions
sauté the onions and garlic with the herbs for a couple minutes
Step 2/4
- 400 g chicken thighs
Add the chicken thighs, make sure everything gets covered with the oil and herbs, try and get a nice sear on the chicken before adding the vegetables.
Step 3/4
- ⅔ Courgette
- ⅔ aubergine
- ⅔ tbsp tomato purée (passata)
Add the vegetables and continue on a medium heat until the chicken is cooked
Step 4/4
- ⅔ Tin chopped tomatoes
Add the chopped tomatoes and cook for serval minutes to let the tomatoes cook down slightly.
