    • ½ cup light brown sugar
    • ½ cup canola oil
    • 2 eggs

    Preheat the oven to 350 F. Mash the bananas with a fork and mix together with the other wet ingredients using a spatula in a large bowl.

    • 1 tsp baking powder

    Add the dry ingredients and stir in with a spatula, being careful not to overmix.

    Fold in the chocolate chips once dry ingredients have been incorporated and there are no streaks of flour in the batter.

    Using a small ice cream scoop, portion out the batter equally into a 12 portion muffin tin and bake for 20 minutes, or until a tested muffin bounces back slightly when poked with a finger.

    Remove muffins from the oven and remove from their pan, placing atop a cooling rack when they are cool to touch.
