Coffee Banana Bread with Chocolate Chunks

Step 1/7

Preheat the oven to 325F (160C) and grease & flour a loaf pan.
Step 2/7
- ⅜ bananas
- ⅛ cup margarine
- ⅜ tbsp flaxseed flour
- ⅝ tbsp water
Combine the flaxseed flour and water and let that sit. Mash the banana with a fork and melt the margarine.

- ⅛ cup sugar
- ⅛ cup brown sugar
- ⅛ tsp vanilla extract
Whisk together the banana mash with the both sugars and vanilla. Slowly pour in the melted margarine. Lastly add the flaxegg and combine. You can use a fork for that.

- ¼ cups flour
- ⅛ tsp instant espresso powder
- ⅛ tsp baking soda
- ⅓ tsp baking powder
- ⅛ tsp salt
In a separate bowl combine all dry ingredients. Gradually fold into the wet ingredients and mix until the batter doesn’t have any visible flour lumps anymore.
Step 5/7
- ⅛ chocolate bar
Chop the chocolate bar into bite-sized chunks and fold into the batter. Pour the batter into the prepared loaf pan.
Step 6/7
Bake the loaf for 50 minutes. To test doneness use a wooden stick (i.e. toothpick). If the stick comes out of the loaf clean or with only few crumbs, it’s ready to come out.
Step 7/7
Let the loaf cool for 10 minutes in the loaf pan, then transfer onto a cooling rack to cool off completely.
