"This is one of the best desserts in Austria, usually served with vanilla ice-cream and dark chocolate sauce or apricot jam. But you can add any topping you want. They're also delicious as veggie wraps or with spinach, goat cheese and mushrooms."

Ingredients

55½ g
spelt flour
111⅛ ml
soy milk
¼ tbsp
peanut oil
¼ pinch
salt
jam or any other topping you like

whisk, bowl, pan, nonstick pan, ladle, knife, spoon

  • Step 1/3

    • 55½ g spelt flour
    • 111⅛ ml soy milk
    • ¼ pinch salt
    • whisk
    • bowl

    Put the milk into a bowl and seethe the flavour into it. Mix it until the dough just glides off the whisk

  • Step 2/3

    • ¼ tbsp peanut oil
    • pan
    • nonstick pan
    • ladle

    Pour the oil into the pan or get a non-stick pan and using a medium sized ladle pour some dough into the middle of the pan. Tilt the pan to spread the dough evenly. Wait a few minutes until the bottom is golden brown and then the flip it so that both sides are golden brown and fluffy.

    • jam or any other topping you like

    Now you can finish it with spreading your favourite jam or other topping on the pancake and then roll it up.
