Underbudget fajitas
Ingredients
Step 1/7
- ½ lb beef
- 1 tbsp canned crushed tomatoes
- ½ tbsp soy sauce
- ½ tsp taco seasoning
Shop the steak in stripes and season it with the canned tomato sauce, the soy sauce and the taco seasoning (adobo). Reserved!
Step 2/7
- ½ cup red bell pepper
- ½ cup onion
While the meat is resting and getting all of those flavors together, with a knife lets proceed to shop our white onion and our red bell pepper (you can use more than 1 color of bell pepper, I’m using the red one because of it sweet taste, and because it was the one I had on hand for this “under budget fajitas”

So a little bit of the history behind this Fajitas. My husband called me an told me that he and him brother were about an hour from our house, that they were starving and I was at home with the kids no time to go to the supermarket or make something fancy. My husband love my food so it will be little disappointed if I just order food.
Step 4/7
- 1 tbsp olive oil
After cut the veggies, turn on the stove and add the olive oil into a pan, then add the meat and let it cook using middle hight fire.
Step 5/7
- ½ bag mixed lettuce
While cooking the meat, cut the lettuce in little pieces (season it if you like, I used an italian marinara)
Step 6/7
- ½ bag flour tortilla
- ½ bag shredded cheddar cheese
- ½ oz salsa verde
Cook the tortillas in a pan (2 min. Each side). Take a tortilla, add the salsa verde, add the meat, lettuce, bell pepper and onion, top with cheese and roll it.
Step 7/7
Voila! Perfect under budget fajitas, you can fill up to 8 big tortillas, and feed 4 adults with it. Perfect for a Margarita night! Kids party! Or unexpected visitors.
