"Finland, along with many other Nordic countries, has been on my bucket list for a while now. And since I can’t wait to visit them, why not bring this iconic Finnish recipe to the table? You can already ignore that soups are only for colder months. This recipe might be from a colder climate’s cuisine, but thanks to the fresh dill and vegetables, Lohikeitto is still perfect for spring. My twist: I used smoked salmon instead of fresh and added even more flavors to this already tasty dish."

    Halve the leeks lengthwise, thoroughly wash and finely cut into fine rings. Peel and slice the carrots. Then, peel the potatoes and cut into bite sized pieces.

    In a large pot, sauté leeks and carrot in butter for approx. 1–2 min. until the leeks are translucent and reduced in volume by half. Add potatoes and fish stock. Season with salt and pepper. Let it simmer over medium heat for approx. 10 min. until the potatoes are cooked through.

Tear the smoked salmon into bite sized pieces. In a small bowl, season smoked salmon with lemon juice, zest, and some dill to taste.
