The most delicious salmon soup (Finnish Lohikeitto)

Step 1/4
- 1 leeks
- 1 carrots
- 100 g waxy potatoes

Halve the leeks lengthwise, thoroughly wash and finely cut into fine rings. Peel and slice the carrots. Then, peel the potatoes and cut into bite sized pieces.

- ½ tbsp butter
- 400 ml fish stock
- 400 ml vegetable broth (optional)

In a large pot, sauté leeks and carrot in butter for approx. 1–2 min. until the leeks are translucent and reduced in volume by half. Add potatoes and fish stock. Season with salt and pepper. Let it simmer over medium heat for approx. 10 min. until the potatoes are cooked through.

- ½ lemon
- 7½ g dill
- 125 g smoked salmon
- fine grater

Meanwhile, wash the lemon and grate the zest. Halve the lemon, cut one half into wedges and save the other half for seasoning later. Pluck the dill and chop the pieces. Tear the smoked salmon into bite sized pieces. In a small bowl, season smoked salmon with lemon juice, zest, and some dill to taste.

Add cream to the soup pot and let it simmer for approx. 5 min. Taste the soup and season with salt, pepper, and sugar to your liking. Transfer the soup into deep bowls with a ladle, top with marinated salmon, and garnish with dill and lemon wedges.
