Smoky Chipotle Roasted Cashews

Preheat the oven to 160°C (320°F) and line a baking tray with baking paper.

- 60 g raw unsalted cashews
- ¼ tsp sweet paprika powder
- ¼ tsp chipotle chili powder
- ¼ tbsp rosemary
- ¼ tsp salt
- ⅜ tbsp vegetable oil (light-tasting)
In a bowl mix together vegetable oil, sweet paprika powder, chipotle chili powder, chopped rosemary, and salt to create a paste. Add the cashews and stir until the nuts are well coated in the marinade.

Distribute the marinated cashew nuts evenly on the baking tray, making sure they don't overlap. Roast for about 8 to 10 minutes until slightly browned.
Step 4/4
Remove from the oven and let cool for at least half an hour. Store in an airtight container for up to one month.
