Date Protein Balls

1 food processor, 1 plate, 1 bowl (small), airtight container
Step 1/4
- ¾ cup almonds
- ½ cup pitted Medjool date
- ⅓ cup desiccated coconut plus extra for coatinng
- 1 tsp vanilla extract
- 2 tbsp unsweetened cocoa powder
- pinch salt
- 1 tbsp vanilla protein powder
- 1 food processor
Put all ingredients into a food processor and blend for a few minutes until everything has come together into a slightly sticky dough.
Step 2/4
- 1 plate
Roll a tablespoon of the mixture at a time into ball and set aside on a plate.
Step 3/4
- 1 bowl (small)
Dip each ball into a bowl of desiccated coconut to coat every side.
Step 4/4
- airtight container
Put balls into an airtight container and store in the fridge.
