Chocolate coconut granola
Ingredients

- 83⅓ g rolled oats
- 66⅔ g mixed nuts
- 8⅓ g unsweetened shredded coconut
- 3⅓ g flaxseeds
- 3⅓ g chia seeds
Preheat the oven to 160°C/325°F top/bottom heat. Place a fresh piece of parchment paper on a baking tray. Chop the selected nuts and mix with rolled oats, flaxseeds, chia seeds, coconut flakes.

- ⅔ tsp ground cinnamon
- ⅓ vanilla bean
- 1 tbsp coconut oil
- 1⅓ tbsp honey
- 16⅔ g black cocoa powder
- ⅓ pinch salt
Mix all ingredients and heat over a water bath for approx. 4–5 min. until it forms an even liquid mass. If the chocolate mixture is not sweet enough, you can now add another tablespoon of honey to you taste.

Pour the chocolate mixture over the rolled oats-nuts-seeds mixture and mix thoroughly. At the end, the oats should be evenly coated with chocolate.

Spread the mixture over the entire surface of the baking sheet. Place the crispy granola in the middle rack of the oven and bake for approx. 7 min. Turn the mixture over and put it back in the oven for another approx. 8 min. (Keep checking the oven during the second baking time to make sure it doesn't get too dark).

Allow the granola to cool on the baking sheet for at least 2 hrs. Then sprinkle the toppings over it and fold in. Fill into an airtight container.
