Sandwich duet: poached egg and mango with shrimps

- 1 avocado
- ½ lemon

Peel the avocado, mash it with a fork, season with salt and pepper. Sprinkle with lemon, mix.

- 5 shrimp
- 1 tbsp olive oil
- herbes de Provence

Peel the shrimps. Pour olive oil into a preheated pan, fry the shrimps on both sides, season with salt and sprinkle them with Provencal herbs. Fry for 2-3 minutes, until the shrimp are ready.

Cut the wheat bun, spread bread with butter on both sides and fry in a preheated pan.

- 1 egg

- 1 tbsp vinegar

Break the egg gently into a small bowl. Fill a large saucepan with water, add the vinegar, salt and bring to a hard boil over a high heat. Once boiling, reduce the heat so the water is simmering, then use a wooden spoon to swirl the water into a whirlpool. Pour the egg from the bowl into this whirlpool and cook for 3 minutes. Remove with a slotted spoon and drain on kitchen paper.

Sandwiches assembly. First sandwich: pile the avocado on the fried bun, gently put the poached egg on top. Sprinkle with salt, pepper add chili flakes. Second sandwich: pile the avocado on the fried bun, add some arugula, then slices of mango, a slice of tomato and shrimps on top. Season with salt and pepper. Bon Appetit!
