Refreshing prosecco creation with red berries

- 1 sheets gelatin
- small bowl
Soften gelatin in cold water.
Step 2/4
- 62½ g sugar
- 62½ ml water
- ½ vanilla bean
- ½ lemon
- zester

- small saucepan
- cutting board
- knife
In a small saucepan boil sugar with water, vanilla seeds, and the zest of one lemon.
Step 3/4
Add softened gelatin to the hot mixture. Remove from the stove and leave to cool at room temperature for approx. 20 - 30 min.
Step 4/4
- 100 g mixed berries
- 150 ml Prosecco
- whisk
- ladle
Distribute frozen berries in serving glasses. Add Prosecco to the cooled mixture in the sauce pan, whisk and immediately pour over the frozen berries. Leave to chill for at least 10 min. to allow the gelatin to solidify.
