First thing first we are going to marinate the chicken by grabbing a plate and setting the thin chicken breast slices. Then add some lemon juice from the two full lemons. Season the chicken with salt and pepper and let it sit for 15 minutes.

After the chicken has been marinated; start preheating the pot for your pasta by adding water 3/4 of the way, olive oil, and salt. As well as a pan for your chicken, preheat it with olive oil.

Make your chicken by adding it to a pan with oil. Make sure that the heat is set to medium-high. Cook your marinated chicken until it gets golden brown. When done, let your chicken rest for 10 min.

At the same time while your chicken is in the making, proceed in making your pasta as well. Grab a big pot with olive oil, lots of salt and water 3/4 of the way. Set heat at a high level, to get the water to a boiling point. When water starts to boil, add your pasta. Cook your pasta for 10-12 minutes or taste it until softened.

Now that the chicken and pasta are done is time to plate. For this dish, we will play a bit with the flavors by adding slices of tomatoes or roasted cherry tomatoes dressed with olive oil, balsamic vinegar, salt & pepper on top. I recommend the slices of tomato much more.

This is the final result of the pollo al limón. To make this dish more delicious than what it is, add some parmesan cheese to the whole plate. Enjoy this dish by taking a mouth full of the three principal ingredients combined with all the flavors exploding through your mouth.
