Panna Cotta

- 3 sheets gelatin sheets

Put gelatin sheets in cold water for 10 minutes.

- 200 ml heavy cream
- 75 ml milk
- 45 g sugar
- 5 g vanilla sugar
- 1 pinch vanilla bean seeds

Meanwhile, in a medium saucepan, heat cream, milk, sugar, vanilla sugar, and vanilla seeds on medium heat and bring just to a boil until sugar dissolves. Remove from heat and leave for 5 minutes.

Stir in gelatin and immediately whisk gently (so there are no bubbles) until smooth and dissolved.

Pour cream into 2 individual serving dishes. Refrigerate for at least 3 hours, or until completely set.
