Mara’s Brazilian Chocolate Mousse

2 stand mixers with whisks, bowl, spatula

- ⅝ egg whites
- 1¼ tbsp sugar
- stand mixer with whisk
Beat egg whites until consistency. Add 6 tbsp of sugar and beat again.

- ⅝ egg yolks
- 1¼ tbsp sugar
- stand mixer with whisk
In a separate bowl beat egg yolks until lighter color. Add 6 tbsp of sugar and mix again.

- 40 ml light cream
- bowl
- spatula
With a spatula, combine de egg whites and egg yolks. Add cold light cream and mix it.

- 72 g chocolate (melted)
Add melted chocolate and put in the fridge for 3-4 hours.
