How to truss a chicken

Trussing is the easiest way to obtain evenly browned roast chicken: Simply tie up the legs with cooking twine, thus preventing them from sticking out and burning during roasting.
Preparation:
For a classic preparation, fill the chicken with salt, pepper, garlic, onion wedges and herbs to taste, such as rosemary or thyme. Then, coat with butter and salt and roast in a baking dish in the oven. For an exotic twist, fill with lemongrass or sliced lemon and coat with honey.
