Homemade flavored marshmallows

Step 1/4
- ⅞ gelatin sheets
- 8⅓ ml water
- 33⅓ g sugar
- 3⅓ g corn syrup

Soak gelatin sheets in a bowl of cold water. Add water, sugar, and corn syrup to a saucepan over moderate heat. Let boil until sugar dissolves and the temperature reaches 125°C/255°F.
Step 2/4
- 4⅝ g egg whites

Beat egg whites in a stand mixer fitted with whisks until stiff. Slowly pour in the sugar syrup mixture on low speed until white and glossy.
Step 3/4
- 2½ g strawberry purée
- ⅛ tonka bean

- fine grater
- rubber spatula
Add strawberry purée and grate tonka bean into a small saucepan. Add gelatin sheets to the saucepan and let dissolve. Then pour strawberry mixture into the egg white mixture, and beat on medium speed until marshmallow is thick and the bowl is completely cool to the touch.
Step 4/4
- 1¼ g confectioner’s sugar
- 1¼ g starch
- fine sieve
- baking dish
Sift some powdered sugar and starch into a baking dish. Pour in the marshmallow and smooth the top. Sift again with the remaining powdered sugar and starch. Let rest for approx. 4 hr. Cut into bite-size pieces and enjoy!
