Homemade Ciabatta
Ingredients
Step 1/8
- 192½ g bread flour
- 144 g water
- 3½ g salt
- 19 g olive oil
- 1 g yeast dough
Whisk together water, yeast and olive oil. In larger square bowl, whisk together flour and salt.
Step 2/8
Add the mixture to the bowl filled with flour and salt, and whisk to combine. Cover the bowl. Let dough rest for 45 minuets.
Step 3/8
Lift the dough from one side of the bowl, stretch it, and fold the dough in half. Lift the dough from another side of the bowl, stretch and fold the dough in half. Repeat it twice. Cover the bowl, let dough rest for 30 minuets.
Step 4/8
Repeat the previous step.
Step 5/8
Lift the dough from one side of the bowl, stretch it, and fold the dough in half. Lift the dough from another side of the bowl, stretch and fold the dough in half. Repeat it again. Cover the bowl, let dough rest for 40 minuets.
Step 6/8
Transfer dough to a lightly floured cutting board. Separate the dough into four strings. Then transfer four strings onto a cooking canvas, and make sure there is some space between strings. Moisten a kitchen towel and cover them. Let rest for 30 minuets.
Step 7/8
Preheat the oven to 220C, bake the bread for approx 18 minuets or until golden brown, it’s done. Let cool down, enjoy!
