Combine granulated sugar with molasses in a standing mixer, or a bowl with electric beaters, and beat until sugar and molasses are well combined. For dark brown sugar, add a little extra molasses It's easy to recreate store-bought brown (or Muscovado) sugar at home. All you need to do is combine regular sugar and molasses in the right ratio. For dark brown sugar, add an extra tablespoon of molasses to the mixture. Store the brown sugar in an airtight container to be used for a variety of cakes and cookies.
