Homemade American buttermilk biscuits

- 62½ g flour
- ⅜ tsp baking powder
- ¼ tbsp sugar
- ⅛ tsp salt
- 25 g butter

Add flour, baking powder, sugar, and salt to a bowl. Grate frozen butter on a sheet of parchment papper. Add grated butter to the bowl of dry ingredients and, using your hands, rub the butter into the flour mixture just until crumbly. Transfer to the freezer for approx. 15 min.

Preheat oven to 200°C/400°F. Remove the dough from the freezer, and form a hollow in the center. Add cold buttermilk and carefully start mixing the ingredients with a rubber spatula just until they come together. The dough should be crumbly.

Flour a working surface and gently roll out the dough into a rectangle. Fold both sides into the middle to overlap, then gently roll out again. Repeat the process of folding and rolling out four times.

Cut out biscuits with a cookie cutter. Gently roll out any leftover dough scraps to make more biscuits.

Transfer biscuits to a parchment-lined baking sheet. Bake at 200°C/400°F for approx. 17 min. or until golden brown. Remove from the oven and let cool. Brush with melted butter and enjoy!
