"Quick, hearty, and flavorful all at the same time for any weeknight! I love a good green bean dish and I crave the taze fasulye from Türkiye all the time. While I do not have my grandmother’s expertise on it, I wanted to have a quick and yummy version of the classic. I like to enjoy it with a side of rice and yogurt but it’s totally up to you! If you save some for later, this dish is also enjoyed cold as a meze, and it does not disappoint. If you’re also big on meat, you can have a version with diced beef. Add them in with onion and garlic, make sure it’s thoroughly cooked (you can boil the beef pieces before just in case), and follow the rest of the recipe the same."

    Start by dicing onion and grating garlic. To a large pan, add oil, butter, onion, and garlic. As soon as it heats up add cumin, cayenne pepper, oregano, basil, salt, and pepper. Start frying them on medium heat, stirring each minute for approx. 5 min. Add tomato paste and stir for less than 1 min. until everything is mixed well.

    Meanwhile, wash the vegetables. Cut the rough tips of green beans, and dice tomatoes. Throw them into the same pan. Fry everything for a few more minutes. Add in water and mix. Put the lid on the pan and stir occasionally until the beans are thoroughly cooked. If the water evaporates too fast, add 50 ml. each time you need. You can serve with rice and yogurt!
