Easy Mini Carrot Cake

- 3 tbsp sugar
- 1 tsp baking powder
- 6 tbsp milk
- 2 tbsp vegetable oil
- 8 tbsp all - purpose flour
- 3 tsp vanilla extract

Put flour, sugar, baking powder, milk, oil, and 1 tsp of vanilla extract in to the mug and mix together with a fork.

- 4 tbsp grated carrot
- œ tsp ground cinnamon
Add grated carrot, ground nutmeg, and cinnamon to the mug. Mix well and smooth it out.

Microwave the mug mixture for 1 minute and 30 seconds.

Take the cake out of the mug with a knife. Put it on a plate and divide it into 2 layers.

- 8 tbsp cream cheese
- 4 tbsp melted butter
- 4 tbsp powdered sugar
- œ tsp lemon juice

For the frosting, put cream cheese, butter, lemon juice, and the remaining vanilla extract in a bowl and beat it with a hand mixer. Then slowly add powdered sugar, about 1/3 at a time and beat it until smooth.

Spread the frosting on the first layer of the cake with a knife. Then, spread it on the top and the rest of the cake. You can decorate with some grated carrot if you wish.
