Vegan Breakfast Crumble

- 150 g rolled oats
- 40 g unsweetened shredded coconut
- 1 tsp ground cinnamon
- 1 pinch salt
- 3 tbsp maple syrup
- 1 tsp vanilla bean seeds
- 50 g coconut oil (melted)

Preheat the oven to 180°C/350°F top and bottom heat. Mix the rolled oats, shredded coconut, cinnamon, and salt in a bowl. Then add maple syrup, vanilla bean seeds, and melted coconut oil to the rolled oats and mix well.

- 300 g mixed berries (frozen)
- coconut yogurt (for serving)

Put the frozen mixed berries in a baking dish and spread the crumble mixture evenly over them and bake in the preheated oven for approx. 30 min. Serve with some coconut yogurt.
