    Separate the white and the green of the leek. Halve the whites lengthwise, wash well, and slice thinly. Wash the greens as well, stack them, and cut into thin, long, spaghetti like strips. Prepare a pot of water for pasta and set to boil. Grate the parmesan.

Meanwhile, cook the pasta according to the package. 1 min. before it’s done cooking, add the green leek strips and cook together. Then reserve some pasta water and drain the rest.
