Easy creamy pasta with leek and miso sauce

Step 1/3
- 2 leeks
- 50 g Parmesan cheese

Separate the white and the green of the leek. Halve the whites lengthwise, wash well, and slice thinly. Wash the greens as well, stack them, and cut into thin, long, spaghetti like strips. Prepare a pot of water for pasta and set to boil. Grate the parmesan.

- 200 g spaghetti

- 20 g butter
- olive oil (for frying)

Heat olive oil in a pan and add leek whites. Season with salt and fry for approx. 5–8 min. over medium heat. Add butter and let it melt. Meanwhile, cook the pasta according to the package. 1 min. before it’s done cooking, add the green leek strips and cook together. Then reserve some pasta water and drain the rest.
Step 3/3
- 1 tbsp miso paste
- pepper
Add miso paste, parmesan, drained pasta with leek strips to leek whites and mix well over medium heat. Add in pasta water until a glossy sauce forms to your liking. Serve with extra parmesan on top and pepper.
