"Pancakes and avocado toasts, make way – here comes the breakfast burrito! This Tex-Mex classic earns the name not just because we're choosing to make it earlier in the day, but because it's filled with some of our favorite breakfast favorite: eggs, avocado, and bacon. In the comforting embrace of toasty whole-wheat tortilla, velvety omelet, creamy avocado and crispy bacon meet spicy cheddar, cilantro, sour cream and a good helping of hot sauce if you need that extra kick. For those of you who aren't quite as agile in the morning, there's a welcome trick to make the filling easier to roll up: In a skillet, use melted cheese to "glue" the omelet directly to the tortilla like a second skin. Be sure to keep your pan slightly smaller in diameter than your tortilla wrap. To make this burrito even more substantial and filling, potatoes from the day before, beans, fresh or roasted vegetables can also go into the wrap. These alternative fillings are also great for a vegetarian version without bacon."

    In a non-stick frying pan, fry the bacon until it is crispy. Then remove and drain on a paper towel.

    Meanwhile, scoop avocado from the peel and slice. Pluck cilantro leaves from stems and finely chop stems. Beat eggs in a bowl with salt and pepper. Lightly wipe down the previously used pan with a paper towel. Add butter, let melt and pour in the beaten eggs, cover with a lid.

    Meanwhile, scoop avocado from the peel and slice. Pluck cilantro leaves from stems and finely chop stems. Beat eggs in a bowl with salt and pepper. Lightly wipe down the previously used pan with a paper towel. Add butter, let melt and pour in the beaten eggs, cover with a lid.

    Once the egg has set, but is still slightly runny on the surface, spread the grated cheddar on top. When the cheese has melted a little, place the tortilla on top. Continue to fry with the lid closed for approx. 1–2 min. so that the remaining egg sets and the tortilla sticks to the cheese. Then flip the content out of the pan onto the countertop or a cutting board so that the egg layer is on top.

Fold in sides and roll up tightly like a burrito. Wrap in parchment paper if desired and cut in half with a bread knife.
