Easy cheesy breakfast burrito

Step 1/4
- 6 strips bacon
- nonstick pan (with lid)

In a non-stick frying pan, fry the bacon until it is crispy. Then remove and drain on a paper towel.

- ½ avocado
- 8 sprigs cilantro
- 6 eggs
- 2 tbsp butter

Meanwhile, scoop avocado from the peel and slice. Pluck cilantro leaves from stems and finely chop stems. Beat eggs in a bowl with salt and pepper. Lightly wipe down the previously used pan with a paper towel. Add butter, let melt and pour in the beaten eggs, cover with a lid.

- 80 g shredded cheddar cheese
- 2 whole wheat tortilla
Once the egg has set, but is still slightly runny on the surface, spread the grated cheddar on top. When the cheese has melted a little, place the tortilla on top. Continue to fry with the lid closed for approx. 1–2 min. so that the remaining egg sets and the tortilla sticks to the cheese. Then flip the content out of the pan onto the countertop or a cutting board so that the egg layer is on top.

- 1 lime

Spread sour cream in the center of the wrap, and top with avocado. Add a squeeze of lime. Place bacon strips and add cilantro on top, drizzle hot sauce if desired. Season with salt and pepper. Fold in sides and roll up tightly like a burrito. Wrap in parchment paper if desired and cut in half with a bread knife.
