    Coarsely grate zucchini into a large bowl and season generously with salt. Set aside.

    In the meantime, prepare the dip. Add coriander, mint, parsley, scallion, lemon juice, olive oil, and salt to a food processor, and process until finely chopped. Fold in sour cream and mayonnaise. Season with salt to taste.

    Add drained corn kernels to the bowl with the grated zucchini together with the liquid. Fold in the flour, cornstarch, and our VIVA LA SPICE seasoning. Mix well until a batter forms.

    Add drained corn kernels to the bowl with the grated zucchini together with the liquid. Fold in the flour, cornstarch, and our VIVA LA SPICE seasoning. Mix well until a batter forms.

    Heat the oil in a frying pan over medium-high heat. Spoon in approx. 1 tbsp of the batter and flatten slightly. Fry for approx. 4–6 min. then flip and fry the other side until golden brown and the edges are nice and crispy. Serve immediately and enjoy with the dip.
