Cottage pie with cauliflower mash

Preheat the oven to 200C or 180C fan. Finely dice all vegetables except cauliflower.
Step 2/11
- ½ cauliflower
- 1 tbsp double cream
- 1 tbsp butter
Chop cauliflower into chunks. Place in bowl and add cream and butter.

Microwave on high for 4 mins. Stir to evenly coat. Continue cooking for 3-4 mins until soft.

- 20 g shredded cheddar cheese
- blender
Blend and add cheese. Season.

- ½ tbsp extra-virgin olive oil
- ½ onion
- ½ clove garlic

Heat oil in frying pan over medium heat. Fry onions and garlic until softened.

- 250 g ground beef
Add beef and cook until browned.

- 1 tbsp tomato paste
- 1 stalks celery
- 1 carrots
Add tomato paste, celery and carrots. Stir and cook for 3 mins.

- 75 ml beef stock
- ½ tbsp dried thyme
- 1 bay leaves
Add stock, thyme, bay and seasoning. Cook for 15 mins or until liquid is reduced.

Spread beef mix in the bottom of an oven proof dish.
Step 10/11
- 25 g shredded cheddar cheese (for sprinkling)
Spread and cover with cauliflower mash. Sprinkle with cheese.

Bake for 15 minutes or until brown.
