Chorizo Pasta

Step 1/5
- 150 g pasta
- 2 l water

Prepare a pot of water with salt in it and start to boil pasta after water is boiled. Check the pasta package for the cooking time and turn the heat off when pasta is half cooked, usually 7min.

- 120 g chorizo
- 100 g cherry tomatoes
- 2 cloves garlic
- 1 sprig Thai chili
- parsley (for garnish)
- ½ avocado (ripe, optional)

Meanwhile, cut up garlic, thai chilli pepper, and chorizo. Half cherry tomatoes. Slice avocadoes. Cut up parsely leaves.

- 1 tbsp oil

Put 1 tbsp oil in the frying pan, then fry garlic, chilli pepper until aromatic, then add chorizo in the pan for 3 min until the oil from chorizo comes out. Put cherry tomatoes in and cook for another 5 min.

- 30 g basil (for decorating)

- pepper
Add half-cooked pasta in the pan with chorizo. Then add 3 tbsp of pasta water and keep cooking pasta for another few minutes, until getting your desired pasta texture. Then mix basil with the pasta. Season with salt and pepper. If you aren't sure if the spices is enough, start with small amount then taste and adjust it!
Step 5/5
- 1 tbsp lemon juice
Put lemon juice in the pasta. Decorate the pasta with parsely and avocados.
