Chicken Salna
Ingredients
Step 1/12
- ½ lb chicken thigh
- ¼ tsp ground turmeric
Chicken or any other meat for that sake, is prone to have many impurities and contamination. The best and safe way to clean them is to wash them with turmeric. Turmeric is antiseptic and cleans most of the harmful living organism in the meat. 1. Add 1 tbsp turmeric and 1 tsp salt to the chicken. 2. Coat the chicken well with turmeric and set aside for 5 to 10 min. 3. Then wash the chicken in cold running water. 4. Strain the water completely from chicken and allow it to dry out.
Step 2/12
- 2 tsp peanut oil
- 1 bars cinnamon sticks
- 2 cardamom pods
- 2 cloves
- 1½ tsp fennel seeds
- ½ tsp cumin seed
- ½ tsp black peppercorn
- ½ tsp poppy seed
- 2½ cashews
- ¼ cup coconut pieces
- 1 onions
- 1 tomatoes
Now lets prepare the Masala paste for the gravy. Heat oil in a pan and add the whole spices- cinnamon, cloves, cardamom, pepper corns, fennel and cumin seeds and roast it for few seconds. 2. Add poppy seeds, cashew, grated coconut and saute for 2mins. 3. Then add chopped shallots (or) medium size onion, chopped tomato.
Step 3/12
Allow the mixture to cool completely and then grind it to a fine paste.
Step 4/12
- ½ star anise
- 1 bay leaves
Now for the salna. 1. In a pressure cooker heat oil and add the whole garam masala (cinnamon,star anus, cloves, cardamom,bay leaves and fennel seeds)
Step 5/12
Then add curry leaves, chopped onion,some salt and saute them for a 3 to 4 minutes.
Step 6/12
- ¼ tbsp ground ginger
- ¼ tbsp garlic paste
- 1½ green chilis
- ½ tsp salt
- ½ sprig curry leaf
Once the onions turns golden add the Ginger Garlic Paste, green chilies, turmeric powder. Always use a freshly ground ginger garlic paste for the best flavor.
Step 7/12
- ½ tsp chili powder
- ½ tsp ground coriander
Add the chicken pieces, coriander powder, chili powder cook for 5 to 10minutes.
Step 8/12
After that add grounded paste, chopped tomatoes mix all together.
Step 9/12
- ½ cup water
Add enough water, salt if required and mix well.
Step 10/12
Cover the cooker and cook for 3 - 4 whistles on a medium heat. If you are using a pan to cook then cover it with a lid and cook until the chicken is fully done.It may take around 30 minutes.
Step 11/12
After 30 min, you will see oil floating on the top indicating our chicken salna is ready.
Step 12/12
- ½ stalk cilantro
Finally add a handful of chopped coriander leaves for garnishing.
