  • Step 1/10

    Place noodles in a bowl. Cover noodles with warm water for 20 minutes.

    Toast peppercorns, star anise, and coriander for 4 minutes over medium.

    Peel and slice ginger. Trim the tips and ends of the green onion. Then split them. Save tips for serving! Add the ginger and green onion into the pot and let cook for 3 minutes. Pay attention to the smell, you don’t want it to burn.
