The recipe comes from a talented friend from Detroit who has perfected this dish. It's best with overripe bananas, so it’s a great way to make use of leftover bananas that have turned brown.   • Step 1/4

    Preheat the oven to 175°C/347°F top/bottom heat or 155°C/311°F convection. Grease a loaf pan with a little butter. In a large bowl, mash three bananas with a fork, add the butter and sugar and beat with a hand mixer until creamy. Gradually add the eggs and mix until smooth.

and salt thoroughly until the flour is completely worked into the mixture. Pour the batter into the
baking tin.

    Slice the remaining banana lengthways, place on top of the batter with the cut side facing upwards
and press down. Sprinkle the brown sugar over the banana halves.

    Bake the banana bread for approx. 60–80 min. To check whether it is ready, insert a toothpick or
wooden skewer into the center of the cake. If it comes out clean, the banana bread is ready. Leave
to rest for at least 15 min. before serving.
