    Preheat the oven to 200°C. Place the sheet of puff pastry onto a baking tray and spread the goat cheese evenly onto it. By the way, ready-made tarte falmbée dough works just as well!

    Rinse the apricots, remove the stones and cut them into small pieces

    Place the apricots onto the spread goat's cheese and sprinkle the bacon cubes on top. Season with herbes de Provence and ground pepper. Bake in the middle of the oven for approximately 15 minutes or until the puff pastry has risen and is golden brown and flaky.
