Apple pear compote

- ½ pear

Peel apple and pear, cut of ends, and dice.
Step 2/3
- 125 g sugar
- ½ sprig tarragon
- ⅛ tsp salt
- 20 ml lemon juice
- saucepan

- canning jars
- ladle
Add diced apple, pear, and sugar to a saucepan over medium heat. Add tarragon and salt. Deglaze with lemon juice. Bring to boil, stirring often. Allow to reduce, then remove tarragon. Transfer to canning jars. Enjoy warm or at room temperature with either savory or sweet dishes!

Set a saucepan on the stove over medium heat. Place fruit into the saucepan and add the canning sugar. Add the tarragon and stir. Add the salt and deglaze with lemon juice. Bring to boil and stir often. Allow the compote to reduce. Then remove the tarragon. Fill the compote into canning jars. Serve warm or keep on a shelf.
